The peeling or paring knife is particularly handy and has a short blade. All smaller works in the kitchen are carried out with this knife. The main task, as the name implies, is the paring of fruit and vegetables. It is perfectly suited for cutting along the skin. The solid blade slug made from a chromium-molybdenum-vanadium alloy is hand-forged with Solingen craftsmanship, structurally optimized and then hardened to 58 HRC. In order to give the blade a longer service life and even finer cut, the traditional hand grind is then highly polished. 3.5″ blade, 8″ overall length.
